this subject can be extremely complicated. but the simple part if i understand it correctly is the user1 (for example) would be the same as %%UserFieldOne%% which is the second image field in the add/edit screen in the store manager. the actual dB field would have another number.
the fields in the dB are numbered for reference. for manipulation and for doing other stuff the dB fields are given another name to actually avoid confusion (LOL). so a dB field may be known as dB_field8 for one purpose and it may be known also as user1 for another.
suppose you want to display the contents of a userfield which has a manufacturer's name or a special sku. this information is in user2 of your add/edit product screen.
to call it in the ppinc you would use:
%%UserFieldTwo%%
to call it through script would be
user2
to call it through cart display should be
user2
this is a more user friendly means to call data.
it would be simple to check if my assumptions are correct. put something unique in user2 on a particular product. set the cart display for emails and log to display user2. set your gateway to offline. now go to your store. add the product with the test message to your cart then "buy" it. check the log and emails. the contents of user2 should be displayed. if you want to know what db_user1 displays then enable it and check in the same fashion. you wont hurt anything and you can always remove it.
when you get curious don't hesitat to play around a little. just take notes if necessary and make backups before changing stuff so you can go back. things like the cart display settings can get confusing so take notes of the last settings that function as you expect them to.
