I am severely lost. How and where do you change the productpage.inc that is used.

Are you wanting to use different productPages for different categories or do you just want to change the default productPage to a different layout?

If it is that you just want to change the default productPage to a different layout, then choose the layout you want to use from the productPages in the 'html/html-templates' directory and rename it to productPage.inc.

If it is that you want to use different productPages for different categories, you will need to be a bit more specific in how you want it to go and then we can better hep you.
Also posting the store's URL with your request will allow us to see what you have so far and better direct you.
